Detailed Programme
Michael will welcome you into the heart of the Apulian countryside, where there was once a farm for raising dairy cows, later abandoned, and which has now become a winery. The land is cultivated strictly according to organic principles and, in the vineyard, everything is done by hand, from the management of the vines to the harvest.
At the beginning of the wine tour, Michael will walk you through the vineyard and explain how he and his partners take care of it organically. All this while sipping a first glass of wine to welcome you.
Afterwards, Michael will guide you through the cellar, explaining how the entire transformation process takes place, from the grapes to fermentation, to the ageing and refinement of the wine, all the way to bottling.
During the visit to the cellar, you will have the unique opportunity to take part in the production process of wine made according to the classic champenoise method, performing the disgorgement (with the possibility of buying and taking home the bottle that you will have disgorged). If you have not heard of it yet, disgorgement is an ancient technique that allows the release of yeast from the bottle after the second fermentation.
Finally, you will be able to relax during a guided tasting of five locally produced natural wines, accompanied by a typical Apulian aperitif consisting of the typical "focaccia a livre" from Sammichele di Bari and olives. Here, you will have time to chat with Michael to ask him all the questions you want, to learn more about his story as a natural wine producer.
