Sara, breeder and artisan cheesemaker
Sara comes from a family with a long tradition of living in the countryside. Her grandparents raised animals and produced cheese on the same farm (in Italian “masseria”) where she still lives today. Sara runs her farm with great pride, using the original techniques taught to her by her family but also employing modern means, in a perfect blend of tradition and innovation.

Detailed Programme
Sara will welcome you to her farm (in Italian “masseria”) surrounded by olive trees, pastures, farmland and dry-stone walls. This is where Sara grew up and learned everything she knows about cows, cheese and rural traditions. No matter what season you visit Sara’s farm, you will always be impressed by the richness of nature and its colours.
First, Sara will explain to you how she looks after her cows and bulls, a hundred head of cattle that represent the heart of her farm. In fact, besides being as attached to them as if they were her own children, their well-being is essential for the quality of the milk and thus of the cheeses that Sara produces.
During the practical part of the experience, Sara will explain the various steps she takes every day to transform freshly milked milk into delicious mozzarella, ricotta, caciocavallo and many other types of cheese. You will be able to see with your own eyes with which expert movements Sara works the “pasta filata”, which you can then shape to make mozzarella yourself, to be tasted on the spot, still warm.
The experience will end with a generous tasting of the fresh and aged cheeses that Sara produces on the farm, all made by hand and with the use of whey starter (you will find out what this is during the experience ) according to the most authentic tradition. This provides an inimitable taste to its dairy products and makes them low in lactose.
During the tasting, you will have time to chat with Sara to ask her all the questions you want and learn more about her history as a breeder and artisan cheesemaker.

Avete presente quando volete un’esperienza personale con un locale? Ecco! Claudio ha curato l’esperienza perfetta con Sara al Caseficio Parcoppello. Abbiamo incontrato Claudio presso l’azienda agricola e il caseficio di Sara, dove abbiamo assistito a un tour e a un’esperienza di produzione di formaggi interessante e ricca di informazioni. Abbiamo incontrato le mucche di Sara, che insieme producono gli straordinari formaggi freschi che abbiamo poi potuto assaggiare. Abbiamo avuto il piacere di sederci per una generosa degustazione di formaggi e mozzarella, caciocavallo, ricotta e persino la buratta di Sara (MOLTO più buona di qualsiasi altra che io abbia mai mangiato!) Consiglierei sicuramente questa esperienza a un’altra famiglia, dato che i nostri bambini (6 e 2 anni) sono stati in grado di godersi l’esperienza, il tour e soprattutto la degustazione. Claudio ha tradotto premurosamente per noi, mentre Sara ci ha permesso di scoprire il lavoro che è la passione della sua vita; e dato che si tratta di un piccolo produttore di formaggio locale, ci siamo sentiti come dei veri addetti ai lavori. Io e la mia famiglia siamo rimasti molto colpiti e soddisfatti da questa esperienza, e anche quando mio figlio minore ha avuto una piccola caduta, Claudio ci ha aiutato a trovare la farmacia più vicina per le cure. La consigliamo vivamente.
Away from mass tourism
Bellissima esperienza in un caseificio artigianale nel cuore della Puglia, vedere come da un secchio di latte si arriva al formaggio fatto e finito è incredibilmente affascinante. Complimenti a Claudio per l’idea e l’organizzazione. Assolutamente consigliato per chi vuole scoprire la Puglia reale, lontano dal turismo di massa.
A unique experience
An experience I highly recommend. Becoming part of the world of Sara and her cows is a unique experience. We spent a wonderful day in contact with the animals and with the fantastic people who allowed us to immerse ourselves into their world thanks to the passion they have for what they do. Not to mention the preparation of the mozzarella and the abundant cheese tasting and mozzarella experience of 0 km products, among the trees and surrounded by nature! Many thanks to Sara, Patrizia and Claudio! 🤩👏🏻 Highly recommended!!!!!
