Always smiling, welcoming and respectful, Madia has a mission: to bring happiness to those who pass by her restaurant. She does this through a cuisine that is elegant, creative, lively in its colours and aromas, and careful in the selection of ingredients. Her bond with Apulian traditional cuisine is deep and strong. Her recipes, in fact, are inspired by those of her grandmother, naturally vegan, as Apulian cuisine is mainly based on the use of vegetables, legumes, flour and olive oil.

Detailed Programme
Madia will welcome you into her restaurant whose atmosphere is so cosy, warm and unique that you will feel as if you are entering a private home. The interior is in fact furnished with simple antique furniture that Madia retrieved from her grandparents' house. Moreover, it is in this same restaurant where her career as a chef began almost 20 years ago when she started working in the kitchen.
At the beginning of the cooking class, Madia will tell you her fascinating story, which led her to become an innovative chef of natural cuisine, namely one based on the products of the earth and respectful of the environment and animals.
Getting to the heart of the chef experience, Madia will show you the ingredients that you will use - mostly grown in her own garden or anyway all locally sourced - and explain the recipes of the dishes that you will prepare together. She will then guide you through the preparation of focaccia, taralli and orecchiette. All traditional Apulian dishes, which are vegan by definition. Do not forget to let us know about any allergies, intolerances or other special requests!
The experience will end with a meal based on the dishes prepared all together during the cooking class, accompanied by a glass of wine. During the meal, you will have time to chat with Madia to ask her all the questions you want and learn more about her story as a natural chef.
